  • 4 cups low-sodium chicken stock
  • 1/2 tbsp regular soy sauce
  • 2 tsp dark soy sauce
  • 1 tsp sesame oil
  • 1 tsp chicken bouillon powder
  • 1/4 tsp white granulated sugar
  • 1/2 cup seafood mushrooms (ends removed or sub with button mushrooms)
  • 5 shiitake mushrooms (sliced)
  • 1/4 cup carrot (julienned)
  • 12 tbsp red chili (sliced, optional)
  • 1/2 cup soft tofu (cut into strips)
  • 1 green onion (finely chopped)
  • 2 tbsp cornstarch (or potato starch)
  • 1/4 cup cold water
  • 2 tbsp white vinegar
  • Salt & white pepper (season to taste)
  • 2 large eggs (beaten)

Instructions

  1. In a small bowl, mix cornstarch with cold water to create a slurry.
  2. In a medium pot, combine chicken stock, soy sauces, sesame oil, sugar, and bouillon powder; stir well.
  3. Heat the mixture on medium-high until boiling.
  4. Add shiitake mushrooms, carrots, and optional chili peppers; simmer for 1-2 minutes.
  5. Gently add tofu strips to the pot.
  6. Stir in the cornstarch slurry and simmer for another minute until thickened.
  7. While stirring continuously, pour in beaten eggs to create ribbons.
  8. Add chopped green onions along with vinegar, salt, and white pepper; serve hot.
