Ingredients

  • 3 ½ cups peeled fresh ginger
  • 4 cups water
  • 5 cups white sugar
  • 1 (3 oz) pouch liquid pectin
  • 5 half pint canning jars with lids

Instructions

  1. Prepare the ginger by cutting it in half; cube one half and shred the other.
  2. Simmer the cubed ginger in a large pot with 4 cups of water for about 1 hour and 15 minutes. Drain and reserve ½ cup of the liquid.
  3. Chill the cooked ginger in the refrigerator for at least 4 hours.
  4. In a pot, combine chilled ginger with reserved water and sugar; bring to a boil while stirring for 1 minute.
  5. Stir in liquid pectin and simmer for an additional 7 minutes, skimming any foam off the top.
  6. Sterilize jars, fill them with hot marmalade leaving about ¼ inch of space at the top, and seal tightly.
  7. Process jars in boiling water for about 15 minutes to ensure proper sealing.
  8. Cool jars completely before storing.
