  • 1 1/4 lbs chicken breast (diced)
  • 12 oz gluten-free farfalle
  • 4 tbsp dairy-free butter
  • 2 cups dairy-free heavy cream
  • 8 oz dairy-free parmesan (shredded)
  • 2 cups chicken broth
  • Chopped spinach
  • 1 3/4 tsp sweet smoked paprika
  • 1 1/2 tsp oregano
  • 1 1/2 tsp garlic powder
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 tbsp minced onion
  • 2 tsp Italian seasoning
  • 1 2/3 tbsp gluten-free 1:1 flour
  • 2 tbsp pasta water (as needed)

Instructions

  1. Boil the gluten-free farfalle according to package directions until al dente. Drain and set aside.
  2. Season diced chicken with sweet smoked paprika, oregano, garlic powder, thyme, black pepper, and salt.
  3. In a skillet over medium heat, sear chicken until cooked through, about 3-4 minutes per side. Transfer to a plate.
  4. In the same skillet, melt dairy-free butter and add minced onion and seasonings; simmer for one minute.
  5. Stir in flour and scrape any bits from the bottom of the skillet.
  6. Gradually add chicken broth and dairy-free heavy cream while whisking; incorporate chopped spinach. Simmer until thickened.
  7. Mix in shredded dairy-free parmesan until melted.
  8. Combine cooked pasta with the sauce; add reserved pasta water if needed for consistency.
  9. Gently stir in seared chicken before serving hot.
