  • 8 skinless chicken thighs
  • 1 garlic clove
  • 400ml coconut milk
  • 2 tablespoons Thai yellow curry paste
  • 500g cooked rice
  • Fresh coriander for garnish
  • Olive oil
  • Salt
  • Black pepper
  • Sugar
  • Water
  • Chili oil
  • Crispy fried onion

Instructions

  1. Marinate the chicken by placing it in a large bowl with grated garlic, half the oyster sauce, salt, and pepper. Let it sit while you prepare the broth.
  2. In a saucepan over medium-high heat, add a splash of coconut milk and cook briefly before stirring in chopped coriander stalks, remaining oyster sauce, and curry paste. Add water and remaining coconut milk; bring to a boil then reduce to simmer for 10-15 minutes.
  3. Heat olive oil in a frying pan over medium-high heat. Cook marinated chicken until slightly charred and fully cooked.
  4. Taste the broth and adjust seasoning with lime juice, salt, sugar, and pepper as desired.
  5. Serve by dividing rice into bowls, ladling curry broth on top, adding sliced chicken, drizzling with chili oil, and garnishing with crispy onions and fresh coriander.
