  • 18 oz all-purpose flour
  • ¼ cup + 1 Tbsp granulated sugar
  • 2½ tsp fine sea salt
  • 1 Tbsp + 1/2 tsp instant yeast
  • ½ cup + 2 Tbsp cold water
  • ½ cup + 2 Tbsp cold whole milk
  • 3 Tbsp unsalted butter (softened)
  • 1¼ cups cold unsalted butter (for laminating)
  • 1 large egg
  • 1 egg yolk
  • Pinch of salt

Instructions

  1. In a mixing bowl, combine flour, sugar, salt, and yeast.
  2. Add cold water and milk; stir until blended.
  3. Knead until smooth; cover and rest for 30 minutes.
  4. Prepare the butter block by flattening cold butter between parchment paper; chill.
  5. Roll out dough into a rectangle; encase chilled butter and fold.
  6. Roll and fold the dough three times to create layers.
  7. Shape into croissants by cutting triangles from the dough and rolling tightly.
  8. Proof the croissants until doubled in size.
  9. Bake at 400°F (200°C) for about 15–20 minutes until golden brown.
