  • 1 lb boneless, skinless chicken breasts/thighs
  • 1 (4 oz) can diced green chiles
  • 1 (15 oz) can cannellini beans (drained)
  • 1 (15 oz) can great northern beans (drained)
  • 2 cups chicken broth
  • 8 oz cream cheese (softened)
  • 1 cup onion (chopped)
  • 3 cloves garlic (minced)
  • 2 tbsp cilantro (fresh, chopped)
  • 2 tbsp lime juice
  • 1/2 tsp cumin
  • 1/2 tsp oregano (dried)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp chili powder

Instructions

  1. Chop onions and mince garlic.
  2. In a slow cooker, combine all ingredients except chicken; stir well.
  3. Place chicken on top of the mixture.
  4. Cover and cook on low for 7 hours or high for 4 hours.
  5. Once cooked, shred the chicken with two forks and mix into the chili before serving.
