Crockpot Birra Tacos are a delightful way to enjoy tender, flavorful beef infused with rich spices, all prepared effortlessly in a slow cooker.

  • 23 pounds boneless chuck roast
  • 1 tablespoon avocado oil
  • coarse ground salt and fresh ground pepper
  • 4 dried Guajillo chiles
  • 56 Chipotle chilis in adobo
  • 1 small red onion (thinly sliced)
  • 8 whole cloves garlic (smashed)
  • 32 ounces beef stock
  • 1 tablespoon tomato paste
  • 14.5 ounce can Fire roasted diced tomatoes
  • ¼ cup apple cider vinegar
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 cinnamon stick
  • 3 dry bay leaves
  • 1 teaspoon smoked paprika
  • ½ tablespoon fresh grated ginger
  • 1 teaspoon ground coriander
  • Corn or flour tortillas
  • Lime wedges
  • Fresh cilantro leaves
  • Diced white onion
  • Shredded Oaxacan cheese (or Italian cheese)

Instructions

  1. Sear the Beef: Heat avocado oil in a cast iron skillet over high heat. Season the beef with salt and pepper, then sear on both sides until browned (about 5-6 minutes per side).
  2. Slow Cook: Transfer seared beef to a crockpot and add Guajillo chiles, chipotles, onion, garlic, beef stock, tomato paste, apple cider vinegar, and spices. Stir well and cook on low for 8 hours.
  3. Shred the Beef: Remove beef from the crockpot and shred it using two forks.
  4. Prepare Sauce: Discard bay leaves and cinnamon stick from the crockpot; blend remaining sauce until smooth.
  5. Combine: Return blended sauce to the crockpot and mix with shredded beef.
