  • 1 lb ground lamb or beef
  • 1 small red onion (finely chopped)
  • 2 cloves garlic (minced)
  • ½ cup flat-leaf parsley (finely chopped)
  • 1 medium tomato (grated)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • ½ teaspoon allspice
  • ½ teaspoon cinnamon
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 4 large Lebanese-style pita breads
  • Olive oil for brushing
  • ½ cup grated Gruyere cheese

Instructions

  1. In a mixing bowl, combine ground lamb (or beef), red onion, garlic, parsley, tomato, cumin, coriander, paprika, allspice, cinnamon, salt, and pepper. Add olive oil and mix well.
  2. Cut each pita in half to create pockets and stuff generously with the meat filling and grated Gruyere cheese.
  3. Preheat a cast iron skillet over medium heat with a drizzle of olive oil. Place stuffed pitas seam-side down in the skillet.
  4. Cook for about 5-7 minutes on each side until golden brown and crispy.
