  • 3 tablespoons extra-virgin olive oil
  • 810 fresh sage leaves
  • 1 package (12 to 18 ounces) shelf-stable potato gnocchi
  • 1 pound chicken or turkey sausage
  • 3 large shallots (or 1 onion)
  • 5 garlic cloves
  • 3/4 cup dry apple vinegar
  • 2 cups canned pumpkin (unsweetened)
  • 1 1/2 cups chicken or vegetable stock
  • 1/2 cup mascarpone cheese

Instructions

  1. Preheat the oven to 275ºF.
  2. In a large skillet over medium heat, heat 2 tablespoons of olive oil. Add gnocchi and cook until crispy on both sides (about 4-5 minutes). Remove and set aside.
  3. In the same skillet, add remaining oil and sausage. Cook until browned, breaking it apart as it cooks.
  4. Add chopped shallots, garlic, sage leaves, salt, pepper, and red pepper flakes; sauté until shallots are translucent.
  5. Pour in apple vinegar and scrape up any browned bits. Stir in pumpkin, stock, and mascarpone; simmer for about 5 minutes.
  6. Return the crispy gnocchi to the skillet and toss gently to coat in sauce.
  7. Serve warm topped with grated cheese.
