Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 1/2 tbsp granulated sugar
  • 1/8 tsp salt
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 3/4 cup whole milk
  • 1/2 cup water
  • 3 tbsp unsalted butter
  • 1/2 cup castor sugar
  • 1/2 cup unsalted butter (for sauce)
  • Thinly sliced orange peel
  • 3/4 cup orange juice

Instructions

  1. In one bowl, mix together flour, sugar, and salt. In another bowl, whisk eggs with vanilla extract, milk, and water until smooth. Combine wet and dry ingredients gradually while whisking to avoid lumps. Stir in melted butter.
  2. Heat a non-stick skillet over medium heat with a bit of butter. Pour about 1/4 cup of batter into the pan, swirling to form an even layer. Cook until edges lift, flip gently, and cook the other side until golden.
  3. For the orange sauce, melt butter in a saucepan over medium heat. Add castor sugar and stir until dissolved. Mix in orange peel and cook briefly before adding orange juice.
  4. Fold each crepe into quarters and soak briefly in the warm orange sauce before serving.
