1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
2 tablespoons olive oil
4 tablespoons butter, divided
4 cloves garlic, minced
1 teaspoon Cajun seasoning
1/2 teaspoon paprika
1/4 teaspoon black pepper
1 (16 ounce) package rotini pasta
4 cups chicken broth
1 (32 ounce) block Velveeta cheese, cubed
1 cup heavy cream
1/2 cup shredded cheddar cheese
Salt to taste
Chopped chives for garnish
Instructions
In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Add the chicken pieces along with minced garlic, Cajun seasoning, paprika, and black pepper. Sear the chicken until golden brown and cooked through, about 6-8 minutes. Remove chicken from skillet and set aside.
In the same skillet, add the remaining 2 tablespoons of butter. Add rotini pasta and pour in chicken broth. Bring to a boil, then reduce heat and simmer for 12-15 minutes or until pasta is cooked al dente and most of the broth has been absorbed.
Reduce heat to low. Add cubed Velveeta cheese and heavy cream to the pasta. Stir constantly until cheese is completely melted and sauce is smooth.
Return seared garlic chicken to the skillet. Stir gently to combine all ingredients. Add shredded cheddar cheese and stir until melted. Season with salt to taste.
