  • 1.52 lb tomatoes (any variety)
  • 1 yellow onion
  • 6 cloves garlic
  • 3 tbsp olive oil
  • 0.5 cup raw cashews
  • 15 oz can white beans
  • 4 cups low sodium vegetable broth
  • Juice of 1 lemon

Instructions

  1. Preheat the oven to 425°F and soak cashews in water.
  2. On a lined baking sheet, toss cauliflower, sliced tomatoes, onion, and garlic with olive oil, salt, and pepper; roast for about 40 minutes until tender.
  3. Blend roasted veggies with vegetable broth and canned tomatoes until smooth; return to a pot.
  4. Blend soaked cashews, white beans, and milk until creamy; stir into the pot and simmer for another 5-10 minutes.
  5. Finish with lemon juice; adjust seasoning if needed before serving.
