  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • ½ cup (1 stick) unsalted butter
  • ¼ cup all-purpose flour
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup chopped fresh chives

Instructions

  1. Cook pasta according to package directions until al dente; drain and set aside.
  2. Toss chicken cubes with olive oil, Cajun seasoning, and paprika until coated.
  3. In a large skillet over medium-high heat, cook chicken for 6-8 minutes until golden brown; remove from skillet.
  4. In the same skillet, melt butter and sauté minced garlic for about 1 minute.
  5. Whisk in flour, then gradually add milk and cream; simmer until the sauce thickens.
  6. Stir in mozzarella and Parmesan cheeses until melted; season with salt and pepper.
  7. Mix cooked pasta and chicken into the sauce; coat evenly.
