  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • Juice of 1 lemon
  • 1 cup heavy cream
  • 1 cup jasmine rice
  • 2 cups water or vegetable broth
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Rinse jasmine rice under cold water until clear. In a pot, combine rinsed rice with water or vegetable broth, bring to boil, then simmer covered for 15 minutes. Fluff with a fork and stir in chopped herbs.
  2. Heat olive oil in a heavy skillet over medium-high heat. Season chicken with salt and pepper, cook for 6-7 minutes on each side until golden brown, then set aside.
  3. In the same skillet, sauté minced garlic for about 30 seconds. Add chicken broth and lemon juice, simmering for 3-4 minutes before stirring in heavy cream.
  4. Return chicken to the skillet, simmer for an additional 2-3 minutes to meld flavors.
  5. Serve herb rice topped with creamy lemon garlic chicken and extra sauce if desired.
