4 boneless, skinless chicken breasts
2 tablespoons olive oil
4 cloves garlic, minced
1 cup chicken broth
Juice of 1 lemon
1 cup heavy cream
1 cup jasmine rice
2 cups water or vegetable broth
1 tablespoon fresh parsley, chopped
1 tablespoon fresh thyme, chopped
Salt and pepper to taste
Instructions
Rinse jasmine rice under cold water until clear. In a pot, combine rinsed rice with water or vegetable broth, bring to boil, then simmer covered for 15 minutes. Fluff with a fork and stir in chopped herbs.
Heat olive oil in a heavy skillet over medium-high heat. Season chicken with salt and pepper, cook for 6-7 minutes on each side until golden brown, then set aside.
In the same skillet, sauté minced garlic for about 30 seconds. Add chicken broth and lemon juice, simmering for 3-4 minutes before stirring in heavy cream.
Return chicken to the skillet, simmer for an additional 2-3 minutes to meld flavors.
