  • 1 lb boneless skinless chicken breasts, cut into thick bite-sized pieces
  • 12 oz rotini or fusilli pasta
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese, cubed
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • Fresh parsley, chopped for garnish (optional)

Instructions

  1. Cook the pasta in salted boiling water until al dente (8–10 minutes). Reserve ½ cup of pasta water, drain, and set aside.
  2. In a skillet, heat olive oil and butter over medium-high heat. Add chicken seasoned with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper. Sear for 8–10 minutes until golden brown.
  3. Reduce heat to medium. Add garlic to the same skillet; cook for 1 minute.
  4. Stir in heavy cream and milk; bring to a gentle simmer. Add Velveeta cheese until melted, then stir in cheddar and mozzarella until thickened.
  5. Combine cooked pasta with sauce, adjusting thickness with reserved pasta water if necessary.
  6. Serve hot with optional parsley garnish.
