  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 1-inch piece fresh ginger, grated
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1 tsp garam masala
  • 1 (14 oz) can chickpeas, drained and rinsed
  • 1 (14 oz) can diced tomatoes
  • 1 (14 oz) can full-fat coconut milk
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Juice of 1 lime
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup plain yogurt

Instructions

  1. Heat coconut oil in a large pot over medium heat. Sauté diced onion until translucent.
  2. Add minced garlic and grated ginger; cook until fragrant.
  3. Incorporate beef cubes, browning them on all sides.
  4. Stir in spices: cumin, coriander, turmeric, smoked paprika, chili powder, and garam masala.
  5. Add diced tomatoes and their juices; mix well.
  6. Pour in coconut milk and chickpeas; season with salt and pepper.
  7. Bring to a gentle boil; reduce heat to low and cover. Simmer for about 30 minutes until beef is tender.
  8. In a bowl, combine flour, baking powder, and salt. Mix in plain yogurt until dough forms; knead lightly on a floured surface.
  9. Roll out into flatbreads. Heat a skillet over medium-high heat. Cook each naan for about 2-3 minutes on each side until golden brown.
