  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 cups uncooked penne pasta (or any short pasta)
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried Italian herbs
  • 2 cups fresh spinach, roughly chopped

Instructions

  1. In a large skillet over medium heat, heat the olive oil. Add the diced chicken seasoned with salt and pepper. Cook until browned and fully cooked (about 5-7 minutes). Remove the chicken from the skillet.
  2. In the same skillet, add garlic and sauté briefly before pouring in chicken broth while scraping up any brown bits from the pan.
  3. Return the cooked chicken to the skillet along with heavy cream, uncooked pasta, paprika, and Italian herbs. Bring to a gentle simmer.
  4. Cover and cook for about 15-20 minutes or until pasta is al dente; stir occasionally.
  5. Fold in fresh spinach until wilted (about 2-3 minutes) before serving.
