  • 12 oz rigatoni pasta
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • Salt and black pepper, to taste

Instructions

  1. Cook rigatoni in salted boiling water until al dente (10-11 minutes). Reserve ½ cup pasta water before draining.
  2. Season chicken pieces with Cajun seasoning, salt, and pepper.
  3. In a skillet, heat olive oil and 1 tablespoon butter; sear chicken until golden brown (7-8 minutes), adding half the garlic in the last minute. Keep warm.
  4. In the same skillet, reduce heat and melt remaining butter; sauté remaining garlic for 30 seconds.
  5. Stir in heavy cream and let simmer for 2-3 minutes until thickened.
  6. Add mozzarella and Parmesan; mix until smooth.
  7. Toss cooked rigatoni in the sauce, adjusting with reserved pasta water as needed.
