  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, divided
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper, to taste
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1 cup Velveeta cheese, cubed
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 cup reserved pasta water (if needed)
  • 1 tablespoon chopped parsley (optional)

Instructions

  1. Season chicken strips with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
  2. In a large skillet over medium-high heat, add olive oil and 2 tablespoons of butter. Sear the chicken until golden brown and fully cooked; then transfer to a plate.
  3. Cook rotini in salted boiling water until al dente; reserve 1 cup of pasta water before draining.
  4. In the same skillet, melt the remaining tablespoon of butter and sauté minced garlic for about 30 seconds.
  5. Stir in heavy cream and bring to a gentle simmer; add Velveeta until melted.
  6. Incorporate mozzarella and Parmesan cheese until the sauce is thickened; use reserved pasta water as needed.
  7. Combine cooked rotini with sauce and serve alongside seared chicken.
