Ingredients

Scale
  • 1.5 lbs (680g) boneless, skinless chicken thighs, cut into chunks
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 tablespoon grated ginger
  • 4 cloves garlic, minced
  • Salt to taste
  • 2 tablespoons butter
  • 1 onion, finely chopped
  • 1 tablespoon tomato paste
  • 1 can (14 oz) tomato puree
  • 1 cup heavy cream
  • 1 teaspoon chili powder, adjust to heat preference
  • Salt and sugar to taste
  • 1/2 cup mayonnaise
  • 2 tablespoons plain yogurt
  • 2 garlic cloves, finely minced or grated
  • 1 tablespoon lemon juice

Instructions

  1. In a mixing bowl, combine yogurt, lemon juice, garam masala, turmeric, ground cumin, smoked paprika, grated ginger, minced garlic, and salt. Add chicken chunks to the marinade and mix well until fully coated. Let it sit for at least 30 minutes to absorb flavors.
  2. Heat butter in a large skillet over medium heat. Once melted, add marinated chicken pieces. Cook until browned on all sides (about 6-8 minutes). Remove chicken from skillet and set aside.
  3. In the same skillet, add chopped onion. Sauté until translucent (about 5 minutes). Stir in tomato paste and cook for 2 more minutes before adding tomato puree. Pour in heavy cream and sprinkle chili powder. Adjust seasoning with salt and sugar as needed.
  4. Return cooked chicken to the skillet with sauce. Simmer on low heat for about 15 minutes to thicken.
  5. In a small bowl, mix mayonnaise with plain yogurt, minced garlic, and lemon juice until smooth.
  6. Serve your creamy butter chicken hot over warm naan or alongside crispy fries. Drizzle garlic sauce generously over each serving for extra flavor!
