  • 500g minced chicken
  • 1 egg
  • 1 cup breadcrumbs
  • 2 tbsp milk
  • 2 cloves garlic, finely chopped
  • 1 tsp Italian herb blend
  • Salt & pepper
  • 1 tbsp olive oil for frying
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 cup chicken stock
  • 1 cup heavy cream
  • 2 tbsp tomato paste
  • Fresh parsley, chopped

Instructions

  1. In a mixing bowl, combine minced chicken, egg, breadcrumbs, milk, garlic, Italian herbs, salt, and pepper. Mix well and shape into small meatballs.
  2. Heat olive oil in a frying pan over medium heat. Sear meatballs until golden brown on all sides; set aside.
  3. In the same pan, add more olive oil if needed and sauté sliced onion until translucent. Add bell peppers and garlic; cook until softened.
  4. Stir in smoked paprika, chicken stock, cream, and tomato paste; season with salt and pepper.
  5. Return meatballs to the pan and simmer for 10-12 minutes until cooked through. Serve garnished with chopped parsley.
