  • 1 cup pumpkin puree
  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup liquid-state coconut oil (or canola/vegetable oil)
  • 1/4 cup sour cream (or Greek yogurt)
  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground nutmeg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • pinch salt (optional and to taste)
  • 4 ounces softened brick-style cream cheese (lite is okay)
  • 1/4 cup granulated sugar (for filling)
  • 3 tablespoons all-purpose flour (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a large bowl, mix the egg, pumpkin puree, light brown sugar, granulated sugar, coconut oil, sour cream, vanilla extract, cinnamon, pumpkin pie spice, and ground nutmeg until well combined.
  3. Gently fold in the all-purpose flour, baking powder, baking soda, and optional salt until just combined.
  4. Pour two-thirds of the batter into the prepared pan and smooth the top.
  5. In another bowl, mix softened cream cheese with the granulated sugar (for filling) and three tablespoons of flour until smooth; pour over the batter.
  6. Top with remaining batter and spread evenly.
  7. Bake for about 48 minutes or until golden brown. Let cool before slicing.
