  • 11 oz. white chocolate, chopped
  • 5 tablespoons unsalted butter
  • 3 tablespoons heavy cream
  • Pinch of salt
  • 1 teaspoon orange or vanilla extract (optional)
  • 1/3 cup finely chopped dried cranberries
  • 1/3 cup finely chopped toasted pistachios
  • 1/2 cup powdered sugar

Instructions

  1. In a small saucepan over low-medium heat, melt the butter with the heavy cream. Stir in a pinch of salt and optional extract, then set aside.
  2. Melt the chopped white chocolate using a double boiler until smooth, keeping it under 105°F (40°C).
  3. Gently fold the butter and cream mixture into the melted chocolate until fully combined.
  4. Stir in cranberries and pistachios. Cover with plastic wrap and let cool at room temperature for one hour before refrigerating for 2–3 hours until firm.
  5. Scoop out portions with a melon baller and roll into balls.
  6. Roll each truffle in powdered sugar for coating.
