- 1 medium onion (finely chopped)
- 2 cloves garlic (minced)
- 4 cups potatoes (peeled and diced)
- 4 cups chicken broth
- 1 cup heavy cream or half-and-half
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp dried thyme
- 1 tbsp olive oil (for sautéing)
- ½ cup cheddar cheese (shredded)
- Heat olive oil in a skillet over medium heat. Sauté onion and garlic until translucent (3–5 minutes).
- In the crockpot, combine sautéed onion and garlic, diced potatoes, and chicken broth.
- If desired, brown the Italian-style sausage in the skillet before adding to the crockpot; alternatively, add raw sausage directly.
- Season with salt, pepper, and dried thyme.
- Cover and cook on low for 6 hours or high for 3 hours.
- Stir in heavy cream before serving; allow warming through.
