  • 1 lb Italian-style sausage (mild or spicy)
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 4 cups potatoes (peeled and diced)
  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme
  • 1 tbsp olive oil (for sautéing)
  • ½ cup cheddar cheese (shredded)

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté onion and garlic until translucent (3–5 minutes).
  2. In the crockpot, combine sautéed onion and garlic, diced potatoes, and chicken broth.
  3. If desired, brown the Italian-style sausage in the skillet before adding to the crockpot; alternatively, add raw sausage directly.
  4. Season with salt, pepper, and dried thyme.
  5. Cover and cook on low for 6 hours or high for 3 hours.
  6. Stir in heavy cream before serving; allow warming through.
  7. Spoon into bowls and garnish with shredded cheddar cheese and fresh herbs.
