  • 2 eggs
  • 1 zucchini (diced)
  • 1 red bell pepper (chopped)
  • 1 cup broccoli florets (chopped)
  • 1 carrot (grated)
  • 0.5 red onion (finely chopped)
  • 2 cloves garlic (minced)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon dried oregano (optional)
  • 0.25 cup grated Parmesan or cheddar cheese (optional, for topping)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. In a large mixing bowl, combine cottage cheese, eggs, salt, and black pepper; whisk until blended.
  3. Add diced zucchini, chopped red bell pepper, chopped broccoli florets, grated carrot, finely chopped red onion, and minced garlic; mix until evenly combined.
  4. If using dried oregano, stir it in before pouring the mixture into the prepared baking dish.
  5. Top with optional grated cheese if desired.
  6. Bake for 30–35 minutes until set and lightly golden brown.
  7. Allow to cool slightly before cutting into squares; serve warm or at room temperature.
