  • 2 tbsp instant coffee
  • 2 ½ cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 1 cup unsalted butter (melted and cooled)
  • 1 cup brown sugar (packed light brown sugar)
  • ½ cup white granulated sugar
  • 1 tsp pure vanilla extract
  • 2 large eggs (room temperature)
  • 1 ½ cups semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line two cookie sheets with parchment paper.
  2. In a food processor, blend the instant coffee into a fine powder.
  3. In a medium bowl, sift together flour, baking soda, baking powder, salt, and cinnamon.
  4. In a large bowl, mix melted butter, brown sugar, granulated sugar, vanilla extract, and eggs until well combined.
  5. Add the dry ingredients to the wet mixture using a rubber spatula; stir until just combined.
  6. Gently fold in chocolate chips until evenly distributed.
  7. Using a cookie scoop, portion out dough balls on prepared sheets; top with extra chocolate chips if desired.
  8. Bake for 12-14 minutes until edges are golden but centers are soft.
  9. Let cool on the pan for about 5 minutes before transferring to a cooling rack.
