  • 1/2 cup powdered sugar
  • 8 oz mascarpone cheese
  • 1/2 cup coconut cream
  • 1 cup heavy cream
  • 14 oz sweetened condensed milk
  • 13.5 oz coconut milk
  • 12 oz evaporated milk
  • 1/2 cup alcohol-free vanilla extract
  • 24 ladyfingers
  • 2 cups coconut flakes
  • 1 tsp cinnamon

Instructions

  1. Separate egg yolks into a large bowl and whisk with powdered sugar until pale.
  2. Mix in mascarpone, coconut cream, and half of the coconut milk until smooth.
  3. In another bowl, whip heavy cream with remaining powdered sugar until stiff peaks form.
  4. Fold whipped cream into the mascarpone mixture gently.
  5. Chill the cream mixture while preparing the ladyfingers.
  6. Combine sweetened condensed milk, evaporated milk, remaining coconut milk, vanilla extract, and cinnamon in a bowl.
  7. Lightly dip ladyfingers in this mixture; layer them in a baking dish.
  8. Pour half of the cream mixture over ladyfingers; sprinkle with coconut flakes.
  9. Repeat layers with remaining ingredients and finish with extra coconut flakes on top.
  10. Chill for at least 12 hours before serving.
