  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 cans (14 oz each) coconut milk
  • 1 can (15 oz) chickpeas, drained and rinsed
