  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1/2 tsp cinnamon
  • 1/4 tsp cayenne pepper (optional)
  • Salt and black pepper to taste
  • 1 can (13.5 oz) coconut milk
  • 1 cup beef broth

Instructions

  1. Prepare the ingredients by chopping the onion, mincing garlic, grating ginger, and cutting the beef chuck into chunks if needed.
  2. Heat vegetable oil in a large pot over medium-high heat. Sear the beef chunks until browned on all sides (5–7 minutes per batch); set aside.
  3. In the same pot, sauté onions for 3–4 minutes until softened. Add garlic and ginger; cook for another minute until fragrant.
  4. Stir in curry powder, turmeric, cinnamon, cayenne pepper (if using), salt, and black pepper. Toast spices for 1–2 minutes.
  5. Pour in coconut milk and beef broth; stir well to combine. Return seared beef to the pot and bring to a simmer.
  6. Reduce heat to low; cover and braise for about 2 hours or until beef is tender.
