  • 2 lbs beef cubes (chuck or stew meat)
  • 2 tbsp vegetable or coconut oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 (13.5 oz) can coconut milk
  • 1 cup beef or chicken broth
  • Juice of lime
  • Fresh cilantro for garnish

Instructions

  1. Season the beef cubes with salt and pepper. Heat oil in a heavy-bottomed pot over medium-high heat. Sear the beef until browned on all sides; remove and set aside.
  2. In the same pot, sauté onion until translucent. Add garlic and ginger; cook until fragrant.
  3. Stir in curry powder and toast for 30 seconds. Return beef to pot, add coconut milk and broth, then lime juice. Simmer gently for 1 to 1.5 hours until beef is tender.
  4. Prepare basmati rice according to package instructions.
  5. Serve the curry over rice with warm naan on the side, garnished with cilantro.
