  • 1 pound ground chicken or turkey
  • 1 medium yellow onion (diced)
  • 4 medium carrots (finely diced)
  • 4 medium celery ribs (finely diced)
  • 5 teaspoons minced garlic (about 5 cloves)
  • 4 cups beef broth (or vegetable broth)
  • 2 (15 ounce cans) diced tomatoes
  • 1 (15 ounce can) red kidney beans (drained and rinsed)
  • 1 (15 ounce can) cannellini beans (drained and rinsed)
  • 1 1/2 cups ditalini pasta
  • 1/4 cup chopped fresh basil (optional)
  • 1/2 cup grated Parmesan cheese (optional)

Instructions

  1. Brown the ground chicken or turkey in a large pot over medium-high heat for about 5 minutes. Drain excess grease.
  2. Add diced onion, carrots, and celery to the pot. Cook until softened (7-10 minutes), adding minced garlic during the last minute.
  3. Pour in beef broth and diced tomatoes, then add drained beans and seasonings. Bring to a boil.
  4. Stir in ditalini pasta and reduce heat to medium. Simmer until pasta is al dente (about 7 minutes).
  5. Serve hot, garnished with fresh basil and grated cheese if desired.
