  • 1.5 lbs small potatoes (gold or red-skinned)
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tbsp red apple vinegar
  • 1 tbsp Dijon Mustard
  • 1 tbsp Grainy Mustard
  • 1 tsp salt
  • ¼ tsp freshly ground black pepper
  • 4 tbsp fresh dill, chopped
  • 1 shallot, peeled and diced
  • 56 cornichons (or dill pickles), diced
  • 1 tbsp cornichon juice

Instructions

  1. Cook the potatoes by cutting them in half or quarters, placing them in a large pot covered with water and salt. Bring to a boil, then simmer for about 15 minutes until tender. Drain and rinse under cold water.
  2. In a mixing bowl, whisk together olive oil, vinegar, mustard, salt, and pepper. Add shallots, cornichons, and dill; mix well.
  3. Toss the warm potatoes with the dressing until evenly coated. Adjust seasoning if needed.
  4. Serve warm or chill before serving with additional dill as garnish.
