  • ½ cup unsalted butter (room temperature)
  • 1 cup granulated sugar (200 grams)
  • 1 teaspoon vanilla
  • 1 large egg (room temperature)
  • 1¼ cups all-purpose flour (163 grams, fluffed and leveled)
  • ⅓ cup unsweetened cocoa powder (30 grams)
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1½ cups powdered icing sugar
  • ½ cup unsalted butter (room temperature)
  • 1 tablespoon milk
  • ½1 teaspoon mint extract (depending on your tastes)
  • green food coloring (optional)
  • ¾ cup semisweet chocolate chips or chopped chocolate (130 grams)
  • 1 tablespoon oil

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together room temperature butter and granulated sugar until fluffy. Add vanilla and egg; mix until combined.
  3. In another bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually combine dry ingredients with wet ingredients.
  4. Drop rounded tablespoons of dough onto the prepared baking sheet. Bake for about 10 minutes or until set but still soft in the center. Cool on the sheet for a few minutes before transferring to wire racks.
  5. For the mint frosting, beat together powdered icing sugar, butter, milk, mint extract, and green food coloring (if using) until smooth.
  6. Once cooled, frost each cookie generously with the mint frosting.
  7. To make the chocolate ganache, melt semisweet chocolate chips with oil in short intervals until smooth. Drizzle over frosted cookies.
