  • 1 small onion, diced
  • ½ cup bell pepper, diced
  • 3 cloves garlic, diced
  • 1 packet chili seasoning mix
  • 8 oz tomato sauce
  • 14.5 oz can diced tomatoes (undrained)
  • ½ cup chicken broth
  • 2 cups macaroni (uncooked)
  • 1½ cups shredded cheddar cheese

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked; drain excess fat if needed.
  2. Add the diced onion, bell pepper, and garlic; cook until softened.
  3. Stir in the chili seasoning mix, tomato sauce, diced tomatoes with juice, chicken broth, and kidney beans; mix well.
  4. Bring to a boil, then reduce heat and simmer for about 20 minutes.
  5. Cook macaroni according to package instructions until al dente; drain.
  6. In another saucepan, melt butter over medium heat; whisk in flour until smooth, then gradually add heavy cream and milk until thickened.
  7. Stir in mustard powder, onion powder, salt, pepper, hot sauce, and cheese until melted. Combine with the chili mixture and cooked macaroni.
  8. Serve warm garnished with fresh parsley.
