  • 11 1/2 lb chicken breasts
  • 1/4 cup lime juice
  • 2 tbsp canola oil (OR vegetable oil)
  • 1 tsp jalapeno (minced)
  • 1 tsp honey
  • 1 tsp salt
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp cumin
  • 1/4 tsp coriander
  • 1/4 tsp cayenne pepper
  • 1/4 tsp ground black pepper
  • 2 tsp olive oil
  • 2 tbsp red onion (chopped)
  • 1/2 cup frozen corn
  • 1/2 cup black beans (rinsed)
  • 1/4 tsp salt
  • pinch ground black pepper
  • soft taco flour tortillas
  • fresh cilantro (chopped)
  • avocado (chopped into chunks)
  • avocado dressing
  • lime wedges

Instructions

  1. In a Ziplock bag, combine half the lime juice, canola oil, jalapeno, honey, and spices. Add chicken, seal the bag, and toss to coat. Refrigerate for at least 30 minutes or up to 24 hours.
  2. Heat a non-stick skillet over medium-high heat. Cook marinated chicken for about 5 minutes on one side, then flip and cook for another 5–8 minutes until it reaches an internal temperature of 160°F (71°C). Let rest before slicing.
  3. In another skillet, heat olive oil. Sauté red onion until translucent, then add frozen corn and black beans. Season with salt and pepper; cook until heated through.
  4. Fill tortillas with sliced chicken and sautéed veggies. Top with chopped cilantro and avocado chunks.
