  • 6 large roasted green chiles, peeled and seeded
  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded sharp cheddar cheese
  • 5 large eggs
  • 1/2 cup whole milk
  • 2 tablespoons all-purpose flour
  • 1 teaspoon baking powder
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with cooking spray or butter.
  2. In a mixing bowl, whisk together the eggs, whole milk, flour, baking powder, salt, and black pepper until smooth.
  3. Layer half of the roasted green chiles in the greased baking dish. Sprinkle half of both cheeses over the chiles.
  4. Repeat with the remaining chiles and cheese layers.
  5. Pour the egg mixture evenly over all layers in the baking dish.
  6. Bake uncovered for 30–35 minutes until golden on top and set in the center.
  7. Let it cool for at least 10 minutes before slicing and serving.
