Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 medium sweet potatoes
  • 2 cups broccoli florets
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C). Toss sliced sweet potatoes with olive oil, salt, and optional spices. Spread on a sheet pan and roast for 25-30 minutes until tender.
  2. Rub chicken breasts with olive oil and seasonings. Cook on a grill or frying pan over medium-high heat for 6-7 minutes per side until golden brown.
  3. Steam broccoli florets for about 5-6 minutes until just tender.
  4. Assemble in meal prep containers: layer broccoli, roasted sweet potatoes, and sliced chicken.
