2 boneless, skinless chicken breasts
2 medium sweet potatoes
2 cups broccoli florets
1 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
Salt & pepper to taste
Instructions
Preheat oven to 425°F (220°C). Toss sliced sweet potatoes with olive oil, salt, and optional spices. Spread on a sheet pan and roast for 25-30 minutes until tender.
Rub chicken breasts with olive oil and seasonings. Cook on a grill or frying pan over medium-high heat for 6-7 minutes per side until golden brown.
Steam broccoli florets for about 5-6 minutes until just tender.
