  • 1 tablespoon ghee or butter
  • 1 small onion, roughly chopped
  • 34 garlic cloves, skin on
  • 2-inch piece of ginger, roughly chopped
  • 1 lb bone-in skinless chicken thighs and drumsticks
  • 4 cups warm water
  • 3/4 teaspoon salt
  • 1/4 teaspoon garam masala
  • Chopped cilantro leaves for garnish
  • Lemon slices
  • Chopped scallions

Instructions

  1. In a large pot over medium heat, melt the ghee.
  2. Add the onion, garlic, ginger, cilantro stems, bay leaf, dried chili, and black peppercorns. Sauté for about one minute.
  3. Layer in the chicken pieces and lightly sear for one minute per side. Sprinkle with salt and cover with water.
  4. Bring to a boil, then reduce heat to low and cover; simmer for 35 to 45 minutes.
  5. Using a colander, drain the shorba from solids and shred the chicken once cooled.
  6. Return the shorba to the pot with shredded chicken, chopped cilantro leaves, garam masala, black pepper, and cream (if using). Simmer for an additional five minutes.
  7. Serve warm with lemon slices and scallions.
