  • 3 lb boneless skinless chicken thighs
  • 3/4 cup plain yogurt
  • 1 tablespoon white vinegar
  • 5 cloves garlic, minced
  • 1 tablespoon coriander powder
  • 1 tablespoon cumin powder
  • 2 teaspoons cardamom powder
  • 1 tablespoon chili powder
  • 1 tablespoon onion powder
  • 1 tablespoon smoked paprika
  • 2 tablespoons lemon juice
  • 1/4 cup olive oil
  • 2 teaspoons sea salt
  • 2 teaspoons black pepper

Instructions

  1. Prepare the chicken by placing thighs on a cutting board and covering them with plastic wrap. Optionally, use a meat tenderizer to pound them for even cooking.
  2. In a large bowl or zip bag, combine chicken thighs with yogurt, garlic, spices (coriander, cumin, cardamom, chili powder, onion powder, smoked paprika), vinegar, lemon juice, olive oil, salt, and pepper. Mix until fully coated.
  3. Refrigerate for 3-5 hours; overnight is best for maximum flavor.
  4. Preheat your grill to medium-high heat and grill chicken thighs for about 8-10 minutes per side until the internal temperature reaches 165°F (75°C). Allow resting before slicing.
