  • 6 cups low-sodium chicken broth
  • 2 tbsp extra virgin olive oil
  • 1 medium onion (finely diced)
  • 2 stalks celery (diced)
  • 2 medium carrots (diced)
  • 3 cloves garlic (minced)
  • 1/2 cup freshly grated Parmesan cheese
  • Fresh parsley (chopped), salt, and pepper to taste
  • Optional: bay leaf, dried thyme, tomato paste

Instructions

  1. In a large pot over medium heat, add olive oil. Sauté the onion, celery, and carrots for about 5-6 minutes until softened. Add garlic and cook for another minute.
  2. Pour in the chicken broth and season with bay leaf, salt, and pepper. Bring to a simmer for about 10 minutes.
  3. Stir in pastina pasta and cook according to package instructions (6-8 minutes). In the last few minutes, add the shredded chicken.
  4. Remove from heat; discard bay leaf. Stir in Parmesan cheese and parsley before serving.
