  • 1/2 tsp red chili flakes (optional)
  • 1/2 cup breadcrumbs
  • 1 egg
  • Salt and pepper, to taste
  • 1 tbsp vegetable oil (for frying)
  • 1 tbsp vegetable oil
  • 2 garlic cloves, minced
  • 1 tbsp Thai red curry paste
  • 1 tsp turmeric powder
  • 1 can coconut milk

Instructions

  1. In a mixing bowl, combine ground chicken, minced garlic, grated ginger, chopped green onions, cilantro, soy sauce, red chili flakes (if using), breadcrumbs, egg, salt, and pepper. Mix until well combined.
  2. Form the mixture into small meatballs about 1 inch in diameter.
  3. Heat vegetable oil in a frying pan over medium heat and cook the meatballs in batches until browned on all sides and cooked through (about 5-7 minutes).
  4. In the same pan, sauté minced garlic until fragrant then stir in Thai red curry paste and turmeric powder for 1-2 minutes. Add coconut milk and mix well.
  5. Return the meatballs to the pan and simmer for an additional 5 minutes to meld flavors.
