  • 2 large eggs
  • 300 ml whole milk
  • 30 g unsalted butter (melted)
  • 180 g cooked chicken (sliced)
  • 100 g Gruyère cheese (freshly grated)
  • Fresh parsley (for garnish)

Instructions

  1. In a mixing bowl, whisk together flour and salt. Create a well in the center and add eggs.
  2. Gradually incorporate milk while whisking until smooth. Stir in melted butter and let rest for 30 minutes.
  3. Heat a nonstick skillet over medium heat, brushing lightly with butter. Pour about 60 ml of batter into the pan, swirling to spread evenly.
  4. Cook until edges lift and the underside is golden (1–2 minutes). Flip and cook briefly on the other side.
  5. To fill, place crêpe flat; add Dijon mustard (if using), chicken slices, and Gruyère cheese down the center. Fold into triangles.
  6. Return filled crêpes to skillet over medium heat until cheese melts and edges crisp (1–2 minutes per side). Garnish with parsley before serving.
