  • 4 cups shredded cooked chicken
  • 2 cups instant rice
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 cup sour cream
  • 1 cup frozen diced onion and bell pepper blend
  • 1 can (10 ounces) diced tomatoes with chilies
  • 1.5 cups chicken broth
  • 1 packet fajita seasoning
  • 8 ounces shredded Mexican blend cheese

Instructions

  1. Preheat the oven to 350°F and lightly spray a 9×13 inch baking dish with nonstick cooking spray.
  2. In a large mixing bowl, combine shredded chicken, instant rice, cream of chicken soup, sour cream, frozen veggies, diced tomatoes (with liquid), chicken broth, fajita seasoning, and half of the shredded cheese. Mix well.
  3. Pour the mixture into the prepared baking dish and spread evenly. Cover tightly with aluminum foil.
  4. Bake for 35 to 45 minutes until the rice is tender and has absorbed most of the liquid.
  5. Remove from the oven, sprinkle with remaining cheese, and return to bake until cheese is melted.
