  • 4 strips Turkey Bacon, chopped
  • 1 small yellow onion, diced
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 1/4 cup all-purpose flour
  • 3 cups chicken broth
  • 2 cups diced Yukon Gold potatoes
  • 1/2 tsp dried thyme
  • 1/2 tsp dried parsley
  • Salt and pepper to taste
  • 1 1/2 cups cooked shredded chicken
  • 1 1/2 cups corn, fresh, frozen, or canned
  • 1 cup half & half
  • 1/3 cup sour cream

Instructions

  1. Cook turkey bacon in a large pot over medium heat until crispy. Remove and set aside.
  2. Sauté diced onion, celery, and minced garlic in the same pot until softened.
  3. Gradually stir in flour; then add chicken broth slowly to avoid lumps.
  4. Add diced potatoes, thyme, parsley, salt, and pepper; simmer until potatoes are tender (about 15 minutes).
  5. Stir in cooked shredded chicken and corn; cook for an additional 5–7 minutes.
  6. Reduce heat; mix in half & half and sour cream until well combined. Simmer for a few more minutes before serving.
