  • 4 boneless, skinless chicken breasts
  • 4 slices of chicken ham
  • 4 slices of Swiss cheese
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (panko or regular)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 cup milk
  • 1 tsp Dijon mustard
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Pound chicken breasts to ¼ inch thickness. Layer each breast with a slice of chicken ham and Swiss cheese, then roll tightly and secure with toothpicks.
  3. Dredge each roll in flour seasoned with salt and pepper, dip in beaten eggs, and coat with breadcrumbs.
  4. Heat olive oil and butter in a skillet over medium heat; sear each roll until golden brown on all sides.
  5. Transfer to a baking dish and bake uncovered for 20–25 minutes until the internal temperature reaches 165°F (74°C).
  6. For the sauce, melt butter in a saucepan, whisk in flour for about a minute, then gradually add milk. Stir in Dijon mustard and Parmesan cheese, simmer until thickened.
  7. Serve warm, garnished with chopped parsley if desired.
