- 1 lb boneless, skinless chicken breast
- 3 Tbsp oil
- 12 oz chow mein noodles
- 2 cups cabbage
- 1 large carrot (julienned)
- 1/2 batch green onions
- 2 garlic cloves
- 4 Tbsp soy sauce
- 3 Tbsp light sesame oil
- 1/2 cup chicken broth
- 1 Tbsp corn starch
- 1 Tbsp granulated sugar
- In a mixing bowl, whisk together soy sauce, sugar, sesame oil, chicken broth, and cornstarch; set aside.
- Cook chow mein noodles according to package instructions; drain and rinse.
- Heat oil in a wok or large frying pan over medium heat. Add bite-sized chicken pieces and cook until golden brown; remove from pan.
- Sauté julienned carrots, cabbage, and garlic in the same pan until softened.
- Return chicken and noodles to the pan; pour the sauce over the top. Stir well and cook for another 2 minutes until heated through.
- Garnish with chopped green onions before serving hot.
