  • 1 lb boneless, skinless chicken breast
  • 3 Tbsp oil
  • 12 oz chow mein noodles
  • 2 cups cabbage
  • 1 large carrot (julienned)
  • 1/2 batch green onions
  • 2 garlic cloves
  • 4 Tbsp soy sauce
  • 3 Tbsp light sesame oil
  • 1/2 cup chicken broth
  • 1 Tbsp corn starch
  • 1 Tbsp granulated sugar

Instructions

  1. In a mixing bowl, whisk together soy sauce, sugar, sesame oil, chicken broth, and cornstarch; set aside.
  2. Cook chow mein noodles according to package instructions; drain and rinse.
  3. Heat oil in a wok or large frying pan over medium heat. Add bite-sized chicken pieces and cook until golden brown; remove from pan.
  4. Sauté julienned carrots, cabbage, and garlic in the same pan until softened.
  5. Return chicken and noodles to the pan; pour the sauce over the top. Stir well and cook for another 2 minutes until heated through.
  6. Garnish with chopped green onions before serving hot.
