  • 1/2 cup unsalted butter, room temperature (113g)
  • 1 cup packed light brown sugar (200g)
  • 1 cup old fashioned oats (96g)
  • 1 Tbsp + 1 tsp all-purpose flour (12g)
  • 1/2 tsp fine salt (3g)
  • 1 large egg, room temperature (56g)
  • 1 tsp vanilla extract (4g)

Instructions

  1. Preheat the oven to 375ºF (190ºC) and line baking sheets with parchment paper.
  2. In a large frying pan, melt 1/2 cup of butter with 1 cup packed brown sugar over medium heat, stirring until smooth.
  3. Stir in 1 cup oats, 1 Tbsp + 1 tsp flour, and 1/2 tsp salt until well combined.
  4. Mix in 1 large egg and 1 tsp vanilla extract until fully incorporated.
  5. Drop teaspoonfuls of batter onto prepared sheets, leaving space between each.
  6. Bake for about 5-7 minutes until golden at the edges. Repeat with remaining batches.
  7. Allow cookies to cool on sheets for 15 minutes before transferring to wire racks.
