  • ¼ cup cherry juice
  • ¼ cup finely chopped maraschino cherries
  • ½ cup softened butter
  • 4 cups powdered sugar
  • 3 cups semi-sweet chocolate chips
  • 2 tablespoons shortening or coconut oil
  • 30 candied cherry halves

Instructions

  1. In a bowl, mix chopped pecans and cherry juice. Let sit for at least 1 hour to meld flavors.
  2. Beat softened butter with powdered sugar until smooth.
  3. Stir in the pecan mixture and chopped cherries until well combined.
  4. Shape the mixture into 1-inch balls and refrigerate for at least 1 hour.
  5. Melt chocolate chips with shortening in a saucepan over low heat until smooth.
  6. Dip each ball into the melted chocolate and place on parchment-lined baking sheet.
  7. Press a candied cherry half on top before the chocolate sets.
  8. Refrigerate until fully set.
