  • 1/2 cup cherry juice
  • 1 cup fresh cherries, pitted and chopped
  • 1/4 cup granulated sugar
  • 2 tablespoons cherry preserves
  • 1 teaspoon vanilla extract
  • Ladyfingers
  • Cocoa powder for dusting

  2. In another bowl, combine sugar and cherry preserves; fold into mascarpone mixture along with chopped cherries.
  3. Dip ladyfingers in a mixture of cherry juice (and optional non-alcoholic flavoring) quickly, then layer in a baking dish.
  4. Spread half of the mascarpone mixture over the ladyfingers, followed by another layer of dipped ladyfingers, then top with remaining mascarpone mixture.
