  • 1 pound short-cut pasta
  • 2 tablespoons olive oil
  • 1 ½ tablespoons dry mustard
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cloves garlic, minced
  • 1 yellow onion, diced
  • ¼ cup dry white grape juice
  • 1 tablespoon Dijon mustard
  • 8 ounces white cheddar cheese, grated
  • 2 cups whole milk
  • 12 tablespoons fresh thyme
  • 1 teaspoon crushed red pepper flakes

Instructions

  1. Combine dry mustard, thyme, oregano, salt, and pepper in a small bowl.
  2. Cut chicken into strips/cubes and season with the mixture. Heat olive oil in a skillet over medium heat and cook chicken until browned; set aside.
  3. Boil water in a large pot; add salt and pasta. Cook until al dente; drain.
  4. In the same skillet, melt butter; whisk in flour. Add grape juice, garlic, onion, and Dijon mustard; cook until onions soften.
  5. Gradually stir in milk until thickened; mix in cheese until melted.
  6. Combine cooked pasta and chicken with sauce; toss well to coat.
